Sometimes you just need a quick snack to get you through the day. Other times you want something sweet, that’s still healthy and satisfying. We can’t promise you that you’ll be able to stop yourself from eating the batter, but we can promise you that every ingredient is packed with healthy, nutritional benefits!
Almonds: They are packed with fiber, protein and healthy fats as well as Vitamin E and Magnesium! We recommend keeping the skin on your almonds, as it’s loaded with antioxidants. Almonds also lower your blood sugar levels, reduce blood pressure and lower your cholesterol levels. To top it off, Almonds help keep you feeling full and satisfied!
Walnuts: We like to call Walnuts, the Mighty Nut! Of all the nuts, it has the highest amount of antioxidants + Omega 3 fats. They reduce inflammation and improve heart disease risk factors. Walnuts help with maintaining a healthy gut, supports brain function and keeps us feeling full!
Dates: Our personal favourite natural sweetener! Dates are loaded with fiber, and promote brain health! Packed with antioxidants such as Flavonoids, Carotenoids, and Phenolic Acid.
Coconut Oil: Did you know that Coconut Oil boosts brain function, reduces hunger and increases fat burning! It also helps protects your nails, skin and hair and kills harmful microorganisms!
Unsweetened Coconut: Loaded with MCT’s which are used by your body to produce energy! Loaded with fiber, it supports with heart health, fat burning, aids our digestive health and improves blood sugar levels.
Recipe
Ingredients:
1 cup raw almonds *with the skin on*
1 cup walnuts
2 cups medjool dates
2 tbsp coconut oil
1 cup unsweetened coconut
*Optional* 1/4 cup raw dried fruit like cranberries, cherries or goji berries
*For Rolling:
½ cup unsweetened coconut (put in a small bowl)
Directions:

In a food processor, simply add in your almonds and walnuts, and pulse until finely ground and a “flour” starts to form

Add in dates, coconut oil and unsweetened coconut flakes and combine together
- If you are adding in dried fruit, you can add it in once combined

Pulse a few times until a dough like consistency is formed and everything is combined

Scoop out 1 tbsp - and form into a ball with your hands **you can make these as big or small as you like**

Continue this process, putting each ball onto a sheet of parchment paper

Once rolled into balls, drop each ball into the bowl of unsweetened coconut - dip and place back onto the parchment paper and into a container that is freezer friendly

Once they are all rolled in coconut, put in the freezer for 1 - 2 hours until they are completely solid and firm

You can leave these in the freezer (that’s our personal favourite!) or you can keep them in the fridge!
Notes:

You don’t need to roll them in unsweetened coconut, you can use any topping of your choice - walnuts, crushed almonds, raw cacao nibs, etc.

If you leave these in the freezer, they can last up to 2 months. If you keep them in the fridge, they last for 2 weeks!
